The date bars aren’t the only thing that suck
I completely forgot to post the pumpkin soup recipe after WEG’s mama gave me hers. And frankly hers looks better.
I haven’t tried this one so it may suck. And in fact, it’s from the same book from whence sprung the awful date bars. (Which would have been ok had I used less flour or butter instead of oil — basically worked criticially instead of following the recipe to a T. Next time I will play around with it.)
Here you go (put below the cut and edited so I don’t have to type so much):
Pumpkin Soup
Ingredients:
1 pie pumpkin, about 2 lbs
1 potato, diced
1 onion, chopped
1 - 2 garlic cloves, crushed
1 teaspoon ground cumin
4 cups broth
1 tablespoon chopped sage leaves
2/3 cup sour cream
Cut pumpkin into small wedges then scoop out seeds. Peel, cut flesh into small pieces.
Heat oil, add potato, onion and garlic, cook gently, stirring occasionally for 5 to 8 minutes or until softened. Sprinkle in the ground dumin and cook for 1 minute more.
Add broth, pumpkin and sage. Bring to a boil, reduce heat and cover. Simmer for 20 to 25 minutes until pumpkin is soft.
Remove pan from heat and allow to cool slightly. Put mixture in blender or food processor and blend ’til a smooth puree.
Return puree to pan and heat. Stir in sour cream.
Can serve sprinkled with nutmeg, cheese, roasted pumpkin seeds or croutons.
Dawn here again. Like I said, I haven’t made it but it’s pretty basic. I’m making it, maybe, this weekend. Someone who shall remain nameless but who is rather small dented the pumpkin and I need to cook it up before the house starts smelling of pumpkin gone bad.
