Let it rise, punch it down, braid your loaves, then wrap in plastic wrap and foil. Freeze. When you thaw it, let it sit in the fridge for about 8 hours. Then bake as usual. Sometimes I find it needs a little extra rising time somewhere warm after it thaws.</description>
